Hennessy X.O. is made from nearly a hundred types of eaux-de-vie produced in the "Four Major Winery", the oldest of which is nearly 30 years old, thus giving this wine excellent quality and varied and complex flavors. Because the wood releases gannic acid, the longer it is stored in new Limousin oak barrels, the more rich and fragrant Cognac will be brewed.
